Birria Pizza

Ingredients
  

Birria Meat

  • 2 lbs beef chuck roast or brisket, cut into chunks
  • 4 dried guajillo chilies stemmed and seeded
  • 2 dried ancho chilies stemmed and seeded
  • 4 cloves garlic minced
  • 1 medium onion chopped
  • 2 cups beef broth
  • 1 tbsp apple cider vinegar
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper freshly ground
  • 2 bay leaves

Pizza Base and Toppings

  • 1 pizza dough homemade or store-bought
  • 1 1/2 cups mozzarella cheese shredded
  • 1 cup Oaxaca cheese shredded
  • 1/4 cup fresh cilantro chopped
  • 1 small red onion sliced, for garnish
  • 1 lime cut into wedges for serving

Consommé (for Dipping)

  • 2 cups reserved birria broth strained
  • 1 tbsp lime juice
  • 1 tsp hot sauce optional

Instructions
 

  • In a large pot or slow cooker, combine the beef, dried chilies, garlic, onion, beef broth, vinegar, and spices. Simmer on low for 4 hours or until the meat is tender and falls apart easily.
  • Remove the beef from the pot and shred it with two forks. Strain the broth and set it aside for the consommé.
  • Preheat the oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
  • Roll out the pizza dough on a lightly floured surface to your desired thickness. Pre-bake for 5 minutes.
  • Spread a thin layer of reserved birria broth onto the pizza crust.
  • Top with shredded birria meat, mozzarella, and Oaxaca cheese.
  • Bake the pizza for 10-12 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with chopped cilantro and sliced red onions.
  • Serve hot with lime wedges and a side of consommé for dipping.

Notes

For a crispier crust, brush the edges with a bit of olive oil before baking. Customize with your favorite toppings like pickled jalapeños or extra cheese!
