  • 1 lb ground beef (or turkey for a leaner option)
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 cups beef broth (or chicken broth)
  • 2 cups potatoes peeled and diced
  • 2 medium carrots diced
  • 2 stalks celery chopped
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream (or milk for a lighter option)
  • 2 tbsp butter
  • 2 tbsp flour (or cornstarch for a gluten-free version)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • salt and pepper to taste

Optional Additions

  • 1/2 cup diced pickles for an extra cheeseburger-like tang
  • 1 tsp smoked paprika to add a smoky depth
  • 1/2 tsp cayenne pepper for a spicy kick
  • 1/2 cup cooked bacon bits for a bacon cheeseburger variation

Instructions
 

  • In a large pot over medium heat, cook the ground beef until browned (about 5-7 minutes). Drain excess grease and set the beef aside.
  • In the same pot, melt butter and add onions, garlic, carrots, and celery. Cook for 3-4 minutes, stirring occasionally, until the vegetables soften.
  • Sprinkle flour over the vegetables and stir well to coat. Gradually add broth while stirring to avoid lumps. Bring the mixture to a gentle boil.
  • Stir in the diced potatoes and return the cooked ground beef to the pot. Reduce the heat to low, cover, and let simmer for 15-20 minutes until the potatoes are tender.
  • Slowly add cheddar cheese, stirring continuously until melted. Pour in heavy cream (or milk) and Worcestershire sauce. Add Dijon mustard, salt, and pepper to taste.
  • If using pickles or bacon bits, stir them in now. Simmer for another 5 minutes, ensuring all ingredients are well combined.
  • Ladle the soup into bowls and garnish with extra cheese or crispy bacon. Serve with toasted buns, crackers, or a fresh salad.

Notes

For a low-carb version, swap potatoes for cauliflower, use heavy cream instead of milk, and thicken with xanthan gum instead of flour.
